Plum cake with amaretti crust

Ingredients for 1 servings:

  • 2 kg plum(s)
  • Breadcrumbs
  • 300 g flour
  • 3 tsp baking powder, level
  • 150 g quark (low-fat quark)
  • 7 tbsp milk
  • 5 tbsp vegetable oil
  • 75 g sugar
  • 1 tbsp vanilla sugar
  • 1 point flavoring, orange flavoring or freshly grated orange peel
  • 1 pinch of salt
  • 100 g biscuits, Amarettini, for sprinkling
  • 1 tbsp vanilla sugar

Instructions

Working time approx. 45 minutes; Total time approx. 45 minutes

Wash and pit the plums. For the dough, quickly mix all the ingredients with a hand mixer until you have a smooth dough. Then transfer it to the greased drip tray and roll it out. Do not overmix, as this will make the dough tough and sticky. The oven can now be preheated to 180°C (top and bottom heat). Thinly sprinkle the dough base with breadcrumbs. Arrange the plums very tightly on the dough, like roof tiles. To sprinkle, place the amaretti biscuits in a freezer bag and roll them over with a rolling pin. Mix the fine amaretti crumbs with the vanilla sugar and sprinkle over the plums. Place the cake in the oven and bake for about 45 minutes. After baking, place the cake with the drip tray on a wire rack and let cool.
