Rougail: the hot sauce from the Indian Ocean

Ingredients for 4 servings:

  • 1 tomato(s), ripe
  • 1 small onion(s)
  • 10 small chili peppers, red, fresh, more or less
  • 1 tbsp olive oil
  • Salt

Instructions

On Réunion, Rougail is served with all meat and fish dishes

Finely dice the tomato and onion, and finely chop the chili peppers. Mix everything with the olive oil, season with salt, and let it steep for half an hour. Rougail is said to be quite spicy and is enjoyed in small quantities with meat and fish dishes. Rougail can also be prepared with various other vegetables or fruits; simply replace the tomato with mango, apricots, or roasted eggplant.
