Ingredients for 1 servings:
- 1 kg zucchini
- 1 kg bell pepper(s), red and yellow
- 500 g onion(s)
- 750 ml ketchup
- 250 ml olive oil
- salt and pepper
- Sambal Oelek
Instructions

for preserving
Chop all vegetables into small pieces or coarsely grate them. Mix with ketchup and olive oil and simmer for about 45 minutes. Season with salt, pepper, and sambal oelek. While hot, pour into clean screw-top jars. Turn the jars upside down for about 15 minutes. It will keep for about 6-8 months. It tastes great as a side dish with meat, rice, pasta, and potatoes.
