Ingredients for 4 servings:
- 100 g desiccated coconut, fresh
- 100 g tomatoes, very finely diced
- 100 g red onion(s), very finely diced
- 1 medium-sized green chili pepper(s), roughly chopped
- 1 m.-large lime(s), juice
- 1 tsp chili powder
- 1 pinch(s) of sugar
- salt and pepper

an exotic side dish to Thai curry dishes with fish
Knead all of the above ingredients by hand until well blended. Tip: Alternatively, you can use dried desiccated coconut. Soak it in 300 ml of lukewarm water for about 1 hour, drain well, and squeeze dry liquid. If you don’t like it too spicy, remove the seeds from the chili pepper.
