Ingredients for 1 servings:

  • 2 packs of strudel sheets
  • 4 eggs
  • 250 g yogurt
  • 250 g feta cheese or other white cheese
  • 80 g butter, melted
  • 80 g flour
  • 1 tsp baking soda

Working time approx. 30 minutes; Total time approx. 30 minutes

Traditional dish from Bulgaria

Whisk the eggs, yogurt, and baking soda until smooth. Chop the cheese into small pieces and mash with a fork. Add the cheese, about 3/4 of the melted butter, and the flour to the yogurt mixture. Mix everything well. Fill each strudel sheet with a portion of the mixture and roll up, not too tightly. Place the rolls in a spiral shape in a buttered dish, placing the first roll in the center. Brush the banitza with the remaining butter. Bake in a preheated oven at 225°C for about 20-25 minutes until golden brown. Alternatively: roast 250g spring onions in a little butter until softened and add to the other mixture.
