Asparagus salad

Ingredients for 4 servings:

  • 400 g asparagus
  • 2 eggs, hard-boiled
  • 4 tomatoes, peeled
  • 1 small onion(s), grated
  • 20 g butter
  • 3 tbsp oil
  • 1 tsp mustard
  • lemon juice
  • salt and pepper
  • Dill, chopped

Instructions

Working time approx. 30 minutes; Rest time approx. 2 hours; Cooking/baking time approx. 15 minutes; Total time approx. 2 hours 45 minutes

Cut the asparagus into salad-sized pieces and cook in a little salted water with the butter and a pinch of sugar. Add the chopped eggs and tomato slices to the drained asparagus. Stir all the remaining ingredients into a marinade and season to taste. Pour the marinade into the salad and let it marinate in the refrigerator.
