Ingredients for 4 servings:
- 1 mango(s), ripe
- 3 apricots, ripe
- 1 large red chili pepper(s)
- 4 salmon steaks
- 2 tbsp honey
- Salt
- 1 tbsp pepper, green, pickled
- Sugar
- 1 tsp vinegar
- curry powder
- Paprika powder, sweet
- 2 cloves garlic
- 5 tbsp oil
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Peel and pit the mango and apricots. Then place about half the mango and all the apricot flesh in a bowl with the honey, oil, pepper, chilies, and garlic and puree. Season to taste with a splash of vinegar, salt, sugar, curry powder, and paprika. Place the steaks in a foil-shaped bag and pour the mixture over them. Fold up the top of the foil and place in an oven preheated to 220 degrees Celsius. Cook at 180 degrees Celsius for 15-20 minutes (depending on how well you like the fish cooked). Then transfer the steaks to plates with the foil on so every drop of the sauce can be consumed. Serve with couscous or rice and salad.
