Ingredients for 2 servings:
- 500 g potatoes (cook until floury)
- 1 bunch of soup greens (without the parsley)
- 50 g bacon, lean
- 2 sausages (knacker)
- 2 bay leaves
- 1 tsp caraway seeds
- 1 tsp allspice, whole
- 1 tsp juniper berries
- 1 onion(s)
- 2 tbsp oil
- ½ liter vegetable broth
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Fry diced bacon and onions in oil until golden brown. Add the cleaned vegetables and potatoes (all cut into pieces), along with the broth and seasonings, and simmer for 15-20 minutes. Meanwhile, heat the sausages in a separate pot. Remove the soup from the heat and blend with a blender or immersion blender until smooth (add a little more hot water or broth if necessary).
