Red snapper with macadamia salsa

Ingredients for 4 servings:

  • 4 fish fillets (red snapper fillets, alternatively sea bass or sole)
  • 1 pack of puff pastry
  • 1 avocado(s)
  • 2 cup(s) spinach, steamed, chopped
  • 100 g butter, melted
  • 1 cup(s) nuts (macadamia), roasted, not too finely chopped
  • ½ avocado(s), not too soft
  • 1 tbsp chili sauce, sweet
  • 1 tbsp lemon juice

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Place two sheets of dough on top of each other to form a nest. Brush with butter. Place a red snapper fillet in the center of each, then use the overhanging dough to create a raised edge. Slice the avocado. Distribute the avocado and spinach between the dough and the fish. Brush with butter again and bake in a preheated oven at 180°C for approximately 8 to 10 minutes. Meanwhile, mix the sauce ingredients thoroughly. Pour the sauce, tablespoon by tablespoon, over the cooked fish.
