Swabian potato salad

Ingredients for 10 servings:

  • 2 ½ kg potatoes
  • 1 large onion(s)
  • 500 ml vegetable stock
  • salt and pepper
  • 2 tbsp mustard, medium hot
  • Vinegar
  • oil

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Boil the potatoes in their skins, peel while still hot, slice, and place in a large bowl. Finely dice the onion and add it, along with the mustard. Now add the warm vegetable stock, mix well, and let it simmer for a few minutes. Mix with the vinegar and oil and season with salt, pepper, and more vinegar and mustard, if desired. Serve while still warm.
