Pumpkin – Apple – Streusel Muffins

Ingredients for 1 servings:

  • 310 g flour, sifted
  • 250 g sugar
  • 1 tsp baking soda
  • ½ tsp salt
  • 2 tsp spice mix (clove(s), ginger, cinnamon)
  • 2 eggs, lightly beaten
  • 250 g pumpkin flesh, pureed
  • 120 ml oil
  • 250 g apples, peeled and diced
  • 2 tbsp flour
  • 50 g sugar
  • ½ tsp cinnamon
  • 4 tsp butter
  • Fat for the molds

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Original recipe from the USA, makes 18 pieces

Combine flour, sugar, spices, baking powder, and salt. Separately, combine eggs, oil, and pumpkin. Add the pumpkin mixture to the flour mixture. Stir until the ingredients are just combined. Fold in the apples. Divide the batter into greased baking dishes. Knead the crumble ingredients together, spread over the batter, and bake in an oven preheated to 175°C for 30-40 minutes.
