My favorite dish!

Mix the garlic, ginger, 4 tablespoons of light soy sauce, hoisin sauce, and honey and marinate the beef for about 30 minutes. Blend the chicken stock with the cornstarch until smooth. Add the pineapple juice, sugar, vinegar, ketchup, 2 tablespoons of light soy sauce, and sherry to the chicken stock. Briefly stir-fry the marinated meat in portions in a wok in sesame oil, remove from the pan, and set aside. Once all the meat is seared, sauté the sliced onions and bell peppers in the oil, then add the meat back in. Add the chicken stock. Stir constantly until the cornstarch is thickened. Finally, season with salt and pepper and add the canned pineapple pieces. If you like, you can also add morels and/or bamboo shoots. I serve it with rice.
