Ingredients for 2 servings:
- 2 turkey schnitzels
- 1 bell pepper(s)
- 2 stalk(s) leeks
- 2 carrots
- 1 m.-large zucchini
- 1 bunch of spring onions
- 250 g mushrooms
- vegetable broth
- Soy sauce
- Spice mix, Chinese
- curry powder
- salt and pepper
- oil
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Cut the turkey schnitzel into strips, dice the bell pepper, carrots, and zucchini, and slice the leeks, spring onions, and mushrooms. Brown the turkey strips in a little oil, then gradually add the vegetables. Deglaze with vegetable stock and simmer gently for 10-15 minutes. Season to taste with soy sauce, salt, pepper, curry powder, and Chinese spice blend. Serve with basmati rice!
