Quark dumplings

Ingredients for 4 servings:

  • 3 rusks
  • 2 tbsp butter
  • 100 g quark
  • 1 egg(s)
  • 6 tbsp milk
  • Salt
  • Parsley

Instructions

Working time approx. 5 minutes; Rest time approx. 5 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

Soup garnish

Melt the butter in the hot milk. Soak the rusks in it and let them cool. Stir in the quark, egg, and chopped parsley. Season with salt. Scoop a teaspoonful of dumplings and either add them directly to the boiling soup or place them in a separate pot in a little hot broth and let them simmer for about 15 minutes. These dumplings are an alternative to the more familiar semolina or marrow dumplings.
