Grandma's Ribele Soup

Ingredients for 1 servings:

  • 5 tbsp flour
  • 1 pinch of salt
  • 1 egg(s)
  • 1 liter vegetable broth
  • 1 tbsp chives, chopped
  • 2 tbsp parsley, chopped

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 4 minutes; Total time approx. 19 minutes

In a bowl, combine the flour, salt, and egg with a fork until smooth. Heat the vegetable broth and bring to a boil. Using a fork, drop the flour mixture into the vegetable broth in thin strips, stirring frequently. As soon as the “ribele” spring to the surface, the soup is ready. Finally, add the chives and parsley. Tip: It’s normal for the flour mixture to be a bit runny. If it’s too runny, add a little more flour.
