Stuffed rolled roast

Ingredients for 4 servings:

  • 1 ½ kg roast pork (rolled roast)
  • 100 g diced ham
  • 2 tsp salt
  • ½ tsp thyme
  • 1 tbsp mustard, medium hot
  • 400 g bratwurst, fresh
  • pepper
  • some Tabasco

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 1 hour 30 minutes; Total time approx. 1 hour 50 minutes

It’s best to have the butcher trim the rolled roast. Mix a teaspoon of salt with thyme and mustard and spread it over the rolled-out top side of the meat. Squeeze the sausage out of the skin, mix with the diced ham, and season with Tabasco. Spread it on the rolled roast. Roll up the meat and tie it with kitchen string or cotton thread. Sprinkle with the remaining salt and pepper. Roast on the grill with a dripping pan underneath in a preheated oven at 220°C for approx. 90-100 minutes until cooked through. Brush frequently with the drained fat, turning halfway through cooking. Serve garnished with spicy vegetables.
