Thai marinade for chicken

Ingredients for 4 servings:

  • 1 kg chicken breast fillet(s), cut into small pieces
  • 5 tbsp sunflower oil or peanut oil
  • 1 garlic clove(s), crushed
  • 2 tsp, heaped curry powder, mild or hot
  • 1 tsp chili powder
  • 1 tsp, heaped coriander powder
  • 1 tsp turmeric powder
  • 1 tsp cumin powder, maybe more if needed
  • 2 cm ginger, finely chopped
  • 1 tsp sesame oil
  • 6 tsp soy sauce, light
  • 1 sprig lemongrass, finely chopped
  • 1 dashes fish sauce
  • 1 half lime(s), juice
  • 3 tbsp cane sugar
  • 1 bunch coriander, fresh, finely chopped

Instructions

Working time approx. 15 minutes; Rest time approx. 12 hours; Cooking/baking time approx. 10 minutes; Total time approx. 12 hours 25 minutes

Combine all the marinade ingredients in a bowl and season to taste. Add the meat to the bowl and toss with the marinade. Let it rest in the refrigerator overnight, ideally. Then thread the chicken onto skewers and grill on a charcoal or gas grill for about 10 minutes, turning frequently. Homemade peanut sauce goes best with this.
