Spicy chicken skewers

Ingredients for 4 servings:

  • 750 g chicken breast fillet(s)
  • 70 g onion(s)
  • 4 cloves garlic
  • 25 g ginger
  • 50 g chili oil
  • 15 g Sambal Oelek, Thai
  • 2 chili peppers, dried, whole
  • 1 tsp peppercorns, whole, black
  • 30 g soy sauce, Japanese
  • 1 pinch of salt
  • 1 tsp, levelled cumin, ground
  • 1 tsp, sautéed coriander, ground

Instructions

Working time approx. 40 minutes; Rest time approx. 3 hours; Total time approx. 3 hours 40 minutes

with Asian barbecue marinade, ideal for the grill

Wash the chicken breast fillet, pat dry, and cut into long, narrow strips. Thread the strips accordion-style onto long wooden skewers. Finely chop the ginger and roughly chop the onion and garlic. Crush the chilies and peppercorns using a mortar and pestle. For the marinade, combine all ingredients in a bowl and blend thoroughly. Brush the chicken skewers with the marinade and let them marinate in the refrigerator for at least 3 hours, covered with cling film.
