Ingredients for 4 servings:
- 750 g chicken breast fillet(s)
- 70 g onion(s)
- 4 cloves garlic
- 25 g ginger
- 50 g chili oil
- 15 g Sambal Oelek, Thai
- 2 chili peppers, dried, whole
- 1 tsp peppercorns, whole, black
- 30 g soy sauce, Japanese
- 1 pinch of salt
- 1 tsp, levelled cumin, ground
- 1 tsp, sautéed coriander, ground

with Asian barbecue marinade, ideal for the grill
Wash the chicken breast fillet, pat dry, and cut into long, narrow strips. Thread the strips accordion-style onto long wooden skewers. Finely chop the ginger and roughly chop the onion and garlic. Crush the chilies and peppercorns using a mortar and pestle. For the marinade, combine all ingredients in a bowl and blend thoroughly. Brush the chicken skewers with the marinade and let them marinate in the refrigerator for at least 3 hours, covered with cling film.
