Ingredients for 4 servings:

  • ¼ cucumber(s)
  • 2 tomatoes
  • 1 baguette(s)
  • 4 tbsp Dijon mustard
  • 200 g cold cuts, e.g. smoked turkey breast
  • 1 tbsp butter
  • 4 eggs
  • salt and pepper
  • 4 slices of cheese, e.g. Emmental, Gouda

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

1. Clean the cucumbers and tomatoes and slice them thinly. Cut the baguette into 4 pieces and halve them horizontally. 2. Spread the bottom halves with mustard and top with tomatoes, cold cuts, and cheese. 3. Bake in a preheated oven at 220°C for about 5 minutes, until the cheese is melted. 4. Fry the eggs in a pan, season, divide them among the baguettes, and place the top half of the bread on top.
