Simple Potato Salad with Vegetables

  • 1000 g Waxy potatoes (peeled)
  • 200 g Cucumber fresh
  • 250 g Fresh tomato
  • 60 g Doubt fresh
  • 150 g Mayonnaise
  • Salt
  • Pepper
  1. Boil the potatoes in salted water until they are firm to the bite and allow to cool. Be careful not to get too soft, otherwise the salad will be mushy later, it is better to leave it a little firmer as it will cook a little longer when it cools.
  2. Cut the cucumber, tomato and onion into small cubes. The cucumber and tomato can be around 0.3, but cut the onion into smaller, fine cubes.
  3. Thinly slice the cooled potatoes and mix with the vegetables and mayonnaise. If you want, you can make the mayonnaise a little more liquid with a sip of water, milk or sour cucumber water, but it is not a must, depends on the consistency of the mayonnaise.
  4. Season everything with salt and pepper / season to taste and leave it covered in the refrigerator overnight.
