Vegan summer roll made from rice paper and vegetables

Ingredients for 5 servings:

  • 15 sheets of rice paper
  • 1 iceberg lettuce
  • 2 carrots
  • ¼ celery root
  • 1 box of sprouts
  • 1 small leek
  • 3 small cucumbers
  • 50 g coriander leaves
  • Soy sauce for dipping
  • salt and pepper
  • Olive oil or sesame oil

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Finely slice the lettuce, carrots, leeks, celery, and cucumber and place them in a bowl. Add the finely chopped coriander, salt, pepper, and oil, and knead everything together. Soak the rice paper in a bowl of cold water for about 3 minutes, then wrap the vegetables in it. Serve with soy sauce.
