Ingredients for 1 servings:

  • 300 g poultry meat
  • 1 piece(s) ginger, walnut-sized
  • ½ shallot(s)
  • 5 sprigs of coriander (optionally spring onions)
  • chili sauce
  • 1 pinch of salt
  • 1 egg yolk
  • 1 tsp, heaped cornstarch

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 45 minutes

For the tsukune, preheat the deep fryer to approximately 180 degrees Celsius. Finely chop the chicken breast fillet. Peel the shallot and ginger and also finely chop them. Place them in a bowl along with the chopped coriander and knead well with salt and starch. Form the minced meat mixture around wooden skewers and place them in the deep fryer for approximately 4 to 5 minutes. Brush the deep-fried tsukune with chili sauce for a wonderful flavor and a beautiful shine. The Japanese serve it with soy sauce with egg yolk. Tip: If you don’t buy your minced chicken from a butcher but chop it yourself, it’s best to add an egg yolk.
