Ingredients for 4 servings:

  • 1 kg banana(s) (plantains), ripe
  • 2 large onions
  • 20 g butter
  • 2 bay leaves
  • 2 tbsp curry powder
  • 125 ml chicken broth
  • 125 ml milk
  • 400 g shrimp (Greenland shrimp)
  • lemon juice
  • Salt and pepper, freshly ground

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Peel the bananas and cut into finger-thick slices. Peel and dice the onions. Melt the butter in a casserole dish, fry the onions until translucent, then add the banana slices and bay leaves. Sprinkle with curry powder and fry for 1 minute. Pour in the chicken stock, cover, and simmer over medium heat for about 20 minutes. Pour in the milk, stir, and simmer uncovered for about 10 minutes. Heat the shrimp in the broth for about 1 minute. Season with lemon juice, salt, and pepper. Tip: Plantains are larger than fruit bananas, harder, grass-green, less sweet, and contain more starch.
