Ingredients for 4 servings:
- 1.2 kg chicken
- 2 onions
- 4 cloves garlic
- 5 tomatoes (beefsteak tomatoes), fresh, alternatively canned tomatoes
- 1 piece(s) ginger
- 1 bag of saffron threads
- oil
- salt and pepper
- Thyme
- ¼ liter of water

a simple and delicious recipe from the Caribbean
Cut up the ready-to-cook chicken and fry in hot oil until golden brown. Remove from the pan after frying and keep warm separately. Briefly fry the crushed garlic with salt, pepper, and finely chopped ginger in the hot oil. Add the diced onions and stir vigorously. After about 2 minutes, add the diced tomatoes and thyme. Finally, add a pinch of saffron, add the chicken pieces, and fill with about 1/4 liter of water. Cover and simmer over low heat for 30 minutes. Season again briefly before enjoying. Serve with rice or white bread. My daughter brought me this recipe from a student exchange with La Reunion.
