Indonesian bananas in batter

Ingredients for 4 servings:

  • 4 firm bananas
  • 25 g butter
  • 100 ml coconut milk
  • 75 g rice flour (available in Asian shops)
  • 1 pinch of salt
  • 2 tsp sugar
  • 3 tbsp desiccated coconut
  • oil

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Pisang Goreng

Peel the bananas and cut into two or three equal pieces. Melt the butter in a small saucepan over low heat. Combine the coconut milk, rice flour, salt, sugar, desiccated coconut, and melted butter in a bowl. Using the whisk attachment of a hand mixer, mix until smooth. It should have the consistency of mayonnaise. Heat the oil in a high saucepan. Toss the bananas in the batter and fry in the hot oil. Be careful, it may splatter! Remove from the pan and drain well on kitchen paper. Serve immediately, with ice cream or honey if desired. Pineapple chunks (canned or fresh) can also be used instead of bananas.
