Ingredients for 1 servings:
- 6 tbsp vinegar
- 6 tbsp sugar
- 1 tsp salt
- 2 tbsp tomato paste
- 2 tbsp soy sauce
- 2 tsp oil (sesame oil)
- 2 tbsp cornstarch
- 1 can pineapple slices
- 1 bell pepper(s), green

First, drain the pineapple. Reserve the juice; you’ll need it later. Cut the pineapple rings into pieces. (Don’t use pineapple in chunks; it’s usually too coarsely chopped, and the quality is better when sliced.) Wash, deseed, and dice the bell peppers. Then, combine the vinegar, sugar, salt, tomato paste, soy sauce, and sesame oil in a saucepan and heat. First, mix the cornstarch with a little water in a bowl until all lumps are gone, then add it to the mixture in the saucepan. When the sauce thickens, top up with pineapple juice. Then add the pineapple chunks and green bell pepper and simmer over medium heat. Stir occasionally to prevent the sauce from burning. Add a little more pineapple juice or water depending on the desired consistency and sweetness.
