Ingredients for 5 servings:

  • 300 g black pudding
  • 1 large onion(s)
  • 200 g Gouda, grated
  • 5 large potatoes
  • 1 large baguette(s)
  • some butter
  • 1 cup milk
  • 1 bunch of chives
  • some olive oil
  • 2 large apples (Braeburn)

Working time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour

for black pudding lovers

Preheat the oven to 180-200 degrees Celsius (convection oven). Cook the potatoes until tender and mash them with butter and finely chopped chives. Transfer to a piping bag. Peel the black pudding and slice them. I always slice them about 1 centimeter thick, but you can adjust this to your taste. Peel, halve, core, and wedge the apples. Peel the onions and slice them into rings. Slice the baguette. Brush the baguette slices with a little olive oil and sprinkle with grated cheese. Layer the apple, black pudding, an onion ring, and a dollop of mashed potato, and sprinkle with cheese. Bake in the oven for about 15 minutes, until golden brown and the cheese is nicely melted. Best served warm.
