Bohemian bread dumplings

Ingredients for 10 servings:

  • 250 g bread roll(s), diced
  • 40 g oil, for roasting
  • 2 eggs
  • 250 ml milk
  • 1 tsp salt
  • 250 g flour
  • 1 bunch of parsley

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Carefully toast the bread cubes in a deep saucepan in plenty of oil until golden brown (they burn very easily!). Then remove from the heat and let cool. Use the pan later to cook dumplings. While the dough is cooling, stir in a medium-firm dumpling batter. Then add the toasted bread cubes and, if desired, chopped parsley, and mix well with a wooden spoon. You’ll already be able to feel whether the consistency is right. It shouldn’t be too laborious; otherwise, add a little more milk. If it’s too soft, add a little more flour. Cover the dough and let it rest in the refrigerator for 45 minutes. Now, with wet hands, form dumplings and let them stand in gently boiling salted water for about 20 minutes. Tip: Individually wrapped in cling film, the dumplings freeze very well in freezer bags.
