Caprese Bacon Ciabatta Sandwich

Ingredients for 4 servings:

  • 2 tomatoes
  • n. B. Salt
  • 1 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 10 basil leaves
  • 3 tbsp mayonnaise
  • 1 garlic clove(s)
  • 1 dashes Tabasco
  • 2 tsp lemon juice
  • 1 Ciabatta, whole
  • 4 leaves of romaine lettuce
  • 8 slices of bacon
  • 2 balls of mozzarella, sliced

Instructions

Working time approx. 20 minutes; Rest time approx. 15 minutes; Cooking/baking time approx. 2 minutes; Total time approx. 37 minutes

Caprese BLT Ciabatta….. wonderfully hearty with tomato, crispy bacon, salad and fresh ciabatta

Wash the tomatoes, slice them, and season with salt. Let the salt soak in for 15 minutes, then carefully squeeze out any excess liquid. Mix the olive oil and balsamic vinegar in a small bowl and set aside. Blend 8 basil leaves with mayonnaise, garlic, Tabasco, a little salt, and lemon juice until smooth. Cut the ciabatta bread lengthwise and scoop out some of the dough inside. Spread the ciabatta bread on both sides with mayonnaise and top with lettuce. Fry the bacon in a pan until crispy, crumble it, and spread it over the lettuce. Then top the lettuce with tomatoes and mozzarella and drizzle with olive oil and balsamic vinegar. Tear the 2 remaining basil leaves and scatter them over the salad, then place the ciabatta top on top. Slice the bread and serve.
