Ingredients for 2 servings:
- 2 crispy rolls (e.g. Krusti)
- 2 chicken schnitzels of your choice
- 1 vine tomato(s)
- 1 ball of mozzarella
- Pesto, green or wild garlic cream
- some salt and pepper
- some olive oil
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 15 minutes
simple, light and fresh – ideal for warm summer days
Slice the tomato and mozzarella. Fry the chicken schnitzel in a pan with olive oil or grill it on the barbecue. Turn it over, then place the mozzarella on top of the schnitzel, then place the tomato slices on top of the mozzarella. Finish frying the chicken schnitzel – ideally, the cheese will melt a little during this time. In the meantime, cut open the bread rolls and spread the bottom half with a little pesto or wild garlic cream. Once the schnitzel is cooked, drizzle the tomatoes with a little olive oil and season with salt and pepper. Place a schnitzel on each roll and, if desired, sprinkle with fresh basil. Place the top half of the roll on top and serve. It also goes well with potato wedges and/or coleslaw (American coleslaw made with white cabbage, carrots, and a creamy sauce). It’s a great barbecue dish and perfect for garden parties. A light meal, ideal for warm summer days, it’s quick to prepare, tastes fresh, and requires only a few ingredients.
