Ingredients for 4 servings:

  • 3 cup(s) medium white beans
  • 1 kg onion(s), chopped
  • 3 tbsp oil
  • 1 tbsp paprika powder, sweet
  • Water
  • Salt
  • 1 pinch(s) cumin
  • 1 pinch of coriander
  • Chili, alternatively harissa

Working time approx. 30 minutes; Rest time approx. 10 hours; Total time approx. 10 hours 30 minutes

Albanian bean stew

Soak the beans in cold water overnight. The next day, boil the beans in plenty of water for 10 minutes, then drain the water. Sauté the onions in the oil until translucent. Add paprika. Fill generously with water (approx. 2-2.5 l). Add harissa or chili. Season with coriander and cumin. Cook until the beans can be easily mashed with a fork. This can take between 1.5 and 3 hours, depending on the age of the beans. Only add salt when the beans are tender. Only add the desired amount of water at the very end of the cooking time, as the beans thicken very quickly. Serve with white bread.
