Hoisin chicken with pak choi

Ingredients for 4 servings:

  • 420 g rice (long grain rice)
  • 60 ml oil (peanut oil)
  • 50 g peanuts, roasted, unsalted
  • 600 g chicken fillet(s), halved lengthwise
  • 2 spring onions
  • 2 cloves garlic
  • 1 bunch of vegetables (baby pak choi)
  • 80 ml water
  • 60 ml sauce (hoisin sauce)

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Cook rice according to package instructions. Clean pak choi, removing the root end and leaf stalks. Slice spring onions diagonally into rings and finely slice garlic. Fry peanuts in a wok or pan in 1 tablespoon until golden brown, drain on kitchen paper. Sear chicken fillets in batches in the remaining peanut oil and remove. Stir-fry spring onions and garlic over high heat for 30 seconds. Add chicken fillets, pak choi, water, and hoisin sauce and cook over high heat for 2 to 3 minutes, stirring, until the pak choi is dark green and the meat is just cooked. Stir in peanuts and serve with rice.
