Ingredients for 4 servings:

  • 8 small slices of cooked ham, cut into approx. 5 mm thick slices
  • 4 glasses of Madeira or Marsala
  • 4 glasses of sweet cream
  • 1 tsp, heaped paprika powder, hot

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 25 minutes

Arrange the ham slices in a pan in a shingle pattern. Pour the Madeira wine over them and simmer gently for 20 minutes over the lowest heat. Remove the ham from the wine, place it in a hot bowl, and keep warm. Increase the heat slightly and allow the wine to evaporate completely, forming a thick sauce. Reduce the heat and add the cream to the pan. Season with paprika and simmer until a thick sauce forms. Pour this over the warm ham slices. Serve with lightly buttered pasta.
