Ingredients for 4 servings:

  • 6 large tomatoes, e.g. B. Beefsteak tomato(s)
  • 250 g sausage meat
  • 150 g minced beef
  • 150 g couscous
  • 150 g long grain rice, e.g. B. Basmati
  • 1 onion(s), medium to large, diced
  • 4 cloves garlic
  • 2 sprigs rosemary
  • 4 sprigs of thyme
  • salt and pepper
  • n. B. Oil

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour 10 minutes

Baked stuffed tomatoes

Mix the sausage meat and minced meat with the finely chopped herbs, salt, and pepper. Preheat the oven to 175°C (fan oven). Sauté the finely diced onion in a little olive oil for 2-3 minutes. Add a little more oil, reduce the heat, and saute the finely chopped garlic for 2-3 minutes. Hollow out the tomatoes and remove the green stems. Collect the juice and tomato flesh in a shallow baking dish. Puree the tomato flesh. Add the onions, garlic, couscous, and rice and mix well. Season generously with salt and pepper. Stuff the tomatoes with the meat mixture and place them on the bed of onions, etc. Cook in the oven for approximately 50 minutes.
