Grandma Petra's semolina soup

Ingredients for 3 servings:

  • 1 tbsp butter
  • 3 tbsp durum wheat semolina
  • 1 liter of water, cold
  • 1 pinch of nutmeg
  • salt and pepper
  • 1 egg(s)
  • Milk
  • vegetable broth
  • Parsley

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 20 minutes

Melt the butter in a saucepan and sauté the semolina, being careful not to let anything stick to the bottom. Then deglaze with 1 liter of cold water, avoiding hot water, as this will cause lumps. Bring the soup to a boil. Season with salt, pepper, and nutmeg, then add vegetable stock to taste. Whisk the egg with a little milk and stir into the still-hot soup for delicious egg flakes. Finally, chop the parsley and add it to the soup.
