Potato and cheese balls

Ingredients for 4 servings:

  • 400 potatoes, cooked
  • 3 onions
  • butter
  • 2 eggs
  • 100 g flour
  • 120 g cheese, grated
  • 4 lovage leaves
  • nutmeg
  • salt and pepper
  • breadcrumbs

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 40 minutes

Snack, vegetarian, makes about 12 pieces – depending on size

Dice the onions and melt or roast them in plenty of butter for about 15 to 20 minutes until nicely browned. Mash or press the cooked potatoes through a ricer, then knead them with the onions, flour, eggs, chopped lovage, and seasonings into a dough. Heat a generous amount of fat in a pot or pan. Form the potato and cheese dough into balls and roll them in breadcrumbs until completely coated. Fry the balls in the hot fat until golden brown.
