Wild garlic cooked cheese

Ingredients for 1 servings:

  • 500 g quark
  • 1 tsp, heaped baking soda
  • 30 g butter
  • 100 g Harzer cheese (hand cheese)
  • 10 wild garlic leaves
  • salt and pepper
  • possibly caraway

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes

Mix the quark with the baking soda and let it foam for one hour. Melt the butter and cheese in a mixing bowl over a pan of simmering water. Once the cheese has melted, add the quark, whisk the mixture vigorously, and heat to 42°C over a pan of simmering water, stirring constantly. Finely slice the wild garlic and stir it into the cheese mixture. Season with salt and pepper. Add the caraway seeds to taste.
