Ingredients for 4 servings:

  • 2 herring fillets
  • 2 eggs, hard-boiled
  • 100 g bacon, or streaky bacon, diced
  • 1 m.-sized onion(s)
  • 2 gherkins
  • ½ bunch dill, with stems
  • ½ tsp brown cane sugar
  • 1 tbsp lemon juice
  • 2 tbsp sour cream
  • Salt and pepper, freshly ground

Instructions

Working time approx. 20 minutes; Rest time approx. 10 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 35 minutes

Simple, quick and delicious

Fry the bacon in a non-stick pan over 3/4 heat until crispy and drain on kitchen paper. Let cool. Peel and finely dice the onion. Finely dice the herring fillets, hard-boiled eggs, and gherkins and place them in a bowl with the onion and bacon. Add the finely chopped dill, lemon juice, brown sugar, and sour cream; mix thoroughly. Let stand for about 10 minutes, then season with salt and freshly ground pepper. Arrange neatly on a plate using a serving ring. For a more eye-catching touch, add a small dollop of sour cream and a sprig of dill. I like to serve this with small boiled potatoes, which I briefly toss in butter with chopped parsley.
