Herring salad in mustard sauce

Ingredients for 6 servings:

  • 600 g matjes fillet(s)
  • 300 g mustard pickle(s)
  • 3 tbsp mustard
  • 3 tbsp mustard, mild, coarse-grained
  • 1 tsp pepper, green, pickled
  • 2 tbsp honey
  • 150 ml cream
  • 250 ml crème fraîche
  • 150 ml mayonnaise

Instructions

Working time approx. 30 minutes; Rest time approx. 12 hours; Total time approx. 12 hours 30 minutes

Cut the fish into 2 cm pieces. Cut the gherkins into very small cubes. Mix all ingredients well and season with salt and pepper and a little of the gherkin juice. Then add the fish and mix gently. Refrigerate overnight.
