Ingredients for 6 servings:
- 250 ml milk
- 50 g butter
- 600 g flour (plus flour for working)
- 25 g fresh yeast
- 1 tsp sugar
- 1 egg(s), size M
- 1 tsp sea salt
- 1 egg yolk, size M
- 2 tbsp whipped cream
- 1 tsp white sesame seeds
- 1 tsp black sesame seeds
Instructions
Working time approx. 20 minutes; Rest time approx. 1 hour 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour 55 minutes
1. Heat the milk and butter in a saucepan. Put the flour in a bowl and make a small well with your hands. Pour a little milk into the well. 2. Crumble the yeast into the milk, sprinkle with sugar, and mix lightly. 3. Add a little flour from the edges to the liquid and mix with a wooden spoon. Dust with a little flour and cover with a kitchen towel. Let rise for 15 minutes. 4. Add the remaining milk, egg, and salt to the flour. 5. Knead with the beaters of an electric mixer until you have a smooth dough. 6. Cover with a kitchen towel and let rise for another 45 minutes. 7. Preheat oven to 200°C (top/bottom heat). Knead the dough on a lightly floured surface, shape it into a log, and divide it into 6-8 pieces. 8. Shape into rolls, place seam-side down on a baking sheet lined with baking paper, and flatten. Let rise for 15 minutes. 9. Mix egg yolk with cream and spread it on the tops of the rolls. 10. Sprinkle with sesame seeds. Bake in the hot oven on the lowest rack for 20 minutes. 11. Cool on a wire rack.
