Quick banana bread / cake

Ingredients for 1 servings:

  • 70 g margarine
  • 150 g sugar
  • 1 lemon(s) – zest, grated
  • 1 pinch of salt
  • 2 eggs
  • 250 g flour (type 405 or 505)
  • 2 tsp baking powder
  • 2 bananas, mashed with a fork

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Recycling for overripe bananas

Briefly mix the margarine, sugar, salt, and lemon zest with a mixer. Add the eggs and mashed bananas and mix. Finally, add the flour mixed with baking powder and mix briefly. The batter may have some lumps; this is fine. Pour the batter into a small loaf pan (17 cm long) and bake in a preheated oven at 180°C for about 45-50 minutes. The bread tastes best warm. Tip: Spread butter on a cut slice. The slices can be briefly heated individually in the microwave. Delicious with coffee in the afternoon or for breakfast.
