Ingredients for 4 servings:
- 500 g celery
- 50 g bacon
- 250 ml cream
- 30 g flour
- 1 egg yolk
- 30 g cheese, grated
- lemon juice
- Salt
- pepper

Clean and peel the celery, cut it into strips (slightly thinner than, for example, chips), and immediately drizzle with lemon juice to prevent it from discoloring. Add it to boiling salted water and cook over reduced heat until half cooked, then drain the water. Finely dice the bacon and fry in a pan. Add the celery, season with pepper, and sauté until cooked through, stirring occasionally. Whisk 2/3 of the cream with the flour and pour over the celery. Whisk the remaining cream with the egg yolk and fold in as soon as the sauce thickens. Arrange the celery on a platter, sprinkle with grated cheese, and serve with pan-fried meat or fish.
