Banana in rice paper wrapper

Ingredients for 4 servings:

  • 4 tbsp sugar
  • some water
  • 200 ml milk
  • 6 sheets of rice paper
  • 4 sprigs of mint
  • 3 bananas
  • 2 tbsp oil
  • 2 tbsp lemon juice

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Mix the sugar and water in a saucepan and heat gently. Dissolve completely until the mixture is light brown. Remove from the heat and stir in the milk. Return everything to the heat and simmer until a smooth sauce forms. Soak the rice paper sheets in water, then spread them out and pat them dry. Peel and quarter the bananas, place them on a sheet of rice paper, add some mint leaves and wrap them up. Heat the oil in a pan and fry the parcels for about 3 minutes until golden brown. Pat off any excess fat on kitchen paper. Season the sauce with lemon juice. Arrange the bananas on plates and serve with the sauce and the remaining mint leaves.
