Chinese mie noodles with chicken and peanut sauce

Ingredients for 2 servings:

  • 250 g poultry meat (chicken breast, turkey schnitzel, duck breast…)
  • 125 g noodles (Mie)
  • 1 onion(s)
  • 1 jar soy sprouts
  • e.g. vegetables (carrots, peppers, other sprouts…)
  • 100 g peanut sauce
  • 75 ml vegetable stock
  • e.g. soy sauce
  • n. B. Oil, for frying
  • n. B. Salt
  • Paprika powder
  • curry powder
  • sesame

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour

Wash the meat, pat dry, and chop finely. Roughly chop the onion and chop the other vegetables. Drain the bean sprouts. Pour boiling water over the noodles and let them simmer for about 5 minutes. Heat oil in a large pan and brown the meat on all sides, seasoning with salt, paprika, and curry. Add the onions and vegetables and fry until soft. Pour in the broth and stir in the peanut sauce, reduce to a simmer, and season generously with soy sauce. Stir in the noodles and sesame seeds and let them simmer for about another 5 minutes. If you like, you can omit the meat and use more vegetables instead. Rice can also be used as a side dish.
