Asian noodles with chicken breast

Ingredients for 4 servings:

  • 150 g noodles (rice noodles), Chinese
  • 300 g chicken fillet(s)
  • 300 g carrot(s)
  • 1 bell pepper(s), yellow and red
  • 4 spring onions
  • 1 clove(s) garlic
  • 2 tbsp oil
  • 50 g peanuts
  • 100 ml sauce (Asian, sweet – hot)
  • 2 tbsp soy sauce
  • 4 sprigs of coriander
  • salt and pepper

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Cook the noodles in boiling water for 2 minutes, rinse with cold water, and drain. Cut the meat, carrots, and bell peppers into strips. Slice the spring onions and chop the garlic. Heat the oil in a pan or wok. Brown the meat, turning frequently, seasoning with salt and pepper, and remove. Add the garlic, peanuts, carrots, bell peppers, and spring onions to the hot oil and stir-fry for 3 minutes. Add the Asian sauce, 4 tablespoons of water, and soy sauce to the vegetables and simmer for about 2 minutes. Stir in the noodles and meat and heat through while stirring. Chop the cilantro and sprinkle over the top.
