Bigos vegetarian

Ingredients for 4 servings:

  • 1 large can of sauerkraut
  • 1 tube(s) Tomato paste
  • 1 point soy, natural
  • 1 jar mushrooms (large jar)
  • 1 onion(s)
  • salt and pepper
  • Oil for frying

Instructions

Working time approx. 15 minutes; Rest time approx. 15 hours; Total time approx. 15 hours 15 minutes

An original from Poland

First, cut the package of soy blocks into small cubes. Peel the onions and either slice them thinly or dice them finely. Fry the soy and onions in a pan with a little oil. Season generously with salt and pepper (if you like it a bit spicier, you can also add a little paprika). Meanwhile, cook the sauerkraut. When the soy cubes are nicely browned, add the mushrooms to the pan. As soon as the sauerkraut is ready, simply stir the soy and mushroom mixture into the sauerkraut. Then add the tomato paste and stir. Let the bigos sit for about 15 minutes before serving. This recipe (although it does contain meat) comes from my grandmother, so please don’t take offense.
