Stir-fried chicken with chili peppers and basil

Ingredients for 3 servings:

  • 300 g chicken breast fillet(s)
  • 3 tbsp oil (peanut oil or vegetable oil)
  • 2 spring onions, diced
  • 2 chili peppers, extra hot, chopped
  • 5 tsp soy sauce
  • 2 tbsp palm sugar, crushed
  • 3 tbsp fish sauce
  • 1 cup basil (Thai basil leaves)

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Cut the chicken into small cubes. Heat the oil in a wok. Fry the meat over high heat, stirring constantly, until it turns white. Add the spring onions and chopped chilies and cook for 1 minute, stirring occasionally. Add the sauces and crushed palm sugar, stir briefly, and finally add the basil leaves. Serve with rice. Note: The extra-hot chilies can be replaced with chopped red or green chilies. Deseeding them further reduces the spiciness.
