Cookies with chocolate and bacon

Ingredients for 1 servings:

  • 10 slices of bacon
  • 160 g butter
  • 125 g sugar, white
  • 125 g brown sugar
  • 2 small eggs
  • 1 tsp vanilla flavor or vanilla sugar
  • 180 g flour
  • ½ tsp salt
  • 1 tsp, leveled baking powder
  • 160 g dark chocolate

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

Makes about 24 cookies.

Depending on your preference, fry the bacon or grill it in the oven at 190°C or 170°C fan-assisted for about 12 minutes until crispy and brown. Place the crispy bacon on a piece of kitchen paper to absorb any excess fat and pat dry on both sides. Preheat the oven to 200°C or 180°C fan-assisted. Cream the butter and sugar with a hand mixer or food processor until light and fluffy. Add the eggs and vanilla. Mix the flour, salt, and baking powder together and stir into the remaining ingredients. If you used bacon, Black Forest ham, etc. instead of bacon, halve the salt. Chop the dark chocolate into 5-8 mm pieces and stir in. Cut the bacon into pieces about 1 cm long and 5 mm wide and stir in. For thicker, softer cookies, refrigerate the dough for 30 minutes. Line a baking sheet with baking paper or silicone sheeting. Using two tablespoons, drop the dough into small mounds on the baking sheet, leaving plenty of space between each mound. 1 tablespoon of dough yields cookies approximately 10-12 cm in diameter. Bake for about 10 minutes, until the edges are nicely browned. Let cool on the baking paper. Yields approximately 24 cookies.
