Caramel Apple Cookies

Ingredients for 1 servings:

  • 120 g butter, salted
  • 120 g brown sugar
  • 1 egg(s), beaten
  • 200 g flour
  • 120 g apples, dried, finely chopped
  • 50 g butter
  • 5 tbsp brown sugar
  • 3 tbsp milk
  • 75 g powdered sugar

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

makes about 20 pieces

Preheat the oven to 190°C. Line 2 baking sheets with baking paper. Beat the butter and sugar until light and fluffy. Gradually add the egg, one at a time, while continuing to beat. Stir in the flour, followed by the apple pieces. Spoon the batter evenly onto the baking sheet. Bake for 10 minutes until golden brown, then let cool on wire racks. For the caramel topping, melt the butter over low heat. Add the brown sugar and milk and stir until the sugar has dissolved. Bring to a boil for 1 minute. Remove from the heat, then add the sifted icing sugar while stirring. Transfer the mixture to a piping bag and pipe onto the cookies. Work quickly before it starts to set. Let the topping dry.
