Ingredients for 4 servings:
- 1 kg beans, wide
- 1 large onion(s)
- ½ red bell pepper(s)
- 1 garlic clove(s)
- 70 g bacon
- ½ tbsp thyme, chopped leaves
- 1 tbsp chives, in rolls
- salt and pepper
- 1 tbsp olive oil
- e.g. tomato paste
Instructions
Working time approx. 25 minutes; Total time approx. 25 minutes
Trim the beans and cut into large pieces. Cook in salted water until al dente, then drain. Meanwhile, finely chop the onion and peppers, along with the bacon. Heat the oil in a pan and fry the onions, peppers, and bacon. If desired, add a little tomato paste and fry briefly. Add the warm beans and season well with salt, pepper, thyme, and chives. Finally, stir in the crushed garlic and sauté everything briefly over low heat.
